Calkins Creamery Cheese

Calkins Creamery is located in Wayne County, PA and is part of Highland Farm, a dairy established in 1841 by the Bryant family. The 250 acre, 6th generation farm entered the state’s farmland preservation program in 2009. Father and son, partners William and Zack, manage a registered herd of 160 Holstein cows on rotational grass grazing, as the seasons permit. Daughter Emily began raw milk cheese production in 2006 and today produces an array of artisanal cheese from soft bloomy rinds to one-year old cave-aged naturals.

PASTURED PAULIN
An aged version of a Trappist Monk recipe from France, differing in age but not complexity from the soft standard. Eludes a rich, complex flavor that lingers on your palate. Subtle sophistication with an amazing finish! Cave aged 6 months 5# wheel
DAISY (TOMME)
A lovely reflection of a French Tomme which will differ throughout the seasons. Boasts a natural rind with straw colored paste that is slightly porous and a salty tang which produces a clean, bright finish. Naturally mold-ripened and cave aged. Daisy is a bit stronger, saltier and more dry than the rest. 8 # wheel
MISTY MORNING CHEDDAR
Modeled after a Welsh Cheddar, the texture is light and slightly crumbly with a pleasantly salty finish which subsides like the early morning mist. Cave aged 6 months 5# wheel

LIDA GOLD (MONTASIO)
Aged Italian cheese painted with olive oil and tomato, bursting with fruit notes. Cave aged 9 months. 8# wheel
